Fruited Walnut Basil Dressing
1/2 cup extra virgin olive oil
3 tbsp walnut oil
4 tbsp sherry vinegar
2 tbsp toasted walnuts
1/4 cup fresh basil, chopped
1/3 cup dried cherries
1 tbsp brown rice syrup (can also use brown sugar)
freshly ground pepper & sea salt, to taste
Place all of the above in a blender and combine well.
Serving suggestion: for a creative slaw, combine with 1/4 cup raisins, 1/2 green cabbage (grated), 1/2 purple cabbage (grated) and 2 medium carrots (grated).
